A truly decadent treat! Dairy-free truffles…mmmm

Caution:  these truffles are AMAZING! … easy and delicious.  Fun for the kids, too.

3/4 c. cashew

3/4 c. water

1 lb. chocolate (ghiradelli’s bittersweet is my favorite, but any kind will work)

1. Blend cashews and water in a blender until smooth (2-4 minutes).

2. Melt chocolate in a double boiler (or microwave).

3. Stir the creamy cashew mixture into the chocolate and refridgerate for at least 2 hours.  The mixture will then be ready to roll into balls.

Roll in cocoa powder, nuts, coconut, etc…
